Our “Si Unyil Manis” – meaning “the little sweet” in the Javanese language – is a rare and remarkable lot from West Java and a new chapter in our journey with Coffea dewevrei (Excelsa). Produced by Rainaldi, one of the few dedicated Excelsa specialists, this coffee grows within a vibrant agroforestry system. Fresh mountain water rises from a spring in the meadow, feeding the stream that runs through the land and shaping the farm’s unique microclimate.
This lot is an Anaerobic Thermo Soaked Natural Excelsa. After careful harvesting, the cherries undergo a controlled soak in warm water before fermenting anaerobically, allowing for a slow and expressive development of sweetness and structure. Dried as a natural, the coffee retains its full fruit character while gaining depth and clarity. The result is a cup that highlights the distinctive personality of Excelsa, enhanced by delicate fermentation notes and a syrup-like mouthfeel.
