This coffee comes from Belancan Village in Kintamani, north Bali, where Kanggo and his family farm five hectares at elevations between 1,200 and 1,400 meters. Their plots are planted with Yellow Caturra alongside citrus trees, allowing the coffee to develop a distinctive profile. The combination of volcanic soil and a cool mountain climate gives these coffees their character.
In Bali, we work closely with our producing partners HEQA, who have collaborated with Kanggo for many years and source cherries directly from his farm each season. Their processing facility in Buleleng is just an hour away, ensuring cherries arrive fresh and ready for careful processing.
After harvest, the cherries undergo a 90-hour fermentation. Their condition is monitored throughout, and once the desired point is reached, the coffee is de-pulped. Drying then takes place in airflow-controlled greenhouses to ensure even, stable results.
